2 Step Broccoli Salad (prep time 5 min, cook time 25 min, makes 2 servings)

Ingredients:

  • 3 small heads of broccoli, cleaned and cut into small florets and lightly steamed
  • 1 tbsp. sesame oil or avocado oil
  • 1 tbsp. sesame seeds
  • handful of cashews
  • 2 stalks of sliced green scallions, chopped

Sauce Ingredients:

  • 1 tbsp. soy sauce
  • 1/2 tsp. siracha (or another hot sauce of your choice)
  • 1 clove garlic, minced
  • 1 tsp. ketchup
  • 2 tbsp. honey

Preparations:

  1. Heat sauce ingredients.
  2. Mix in with all salad ingredients.
  3. Keeps in fridge for up to 4 days.
