Black Bean Quinoa (prep time 10 min, cook time 10 min, makes 8 servings)

Ingredients:

  • 2 cups quinoa
  • 4 large navel oranges, cut into segments
  • 2 red bell pepper, diced
  • 2 jalapenos, seeded and diced (optional)
  • 2 cups canned black beans, drained and rinsed
  • 1 cup corn kernels, drained
  • 2/3 cup chopped red onion

*For the Orange Vinaigrette

  • 1/2 cup olive oil
  • 1/2 cup apple cider vinegar
  • 1/2 cup freshly squeezed orange juice & zest of 1 orange

Preparations:

  1. Cook quinoa according to package directions. Then whisk all vinaigrette ingredients together and set aside.
  2. Mix everything together. *Option to add diced cooked chicken or cooked shrimp.
