Black Bean Quinoa (prep time 10 min, cook time 10 min, makes 8 servings)
- 2 cups quinoa
- 4 large navel oranges, cut into segments
- 2 red bell pepper, diced
- 2 jalapenos, seeded and diced (optional)
- 2 cups canned black beans, drained and rinsed
- 1 cup corn kernels, drained
- 2/3 cup chopped red onion
*For the Orange Vinaigrette
- 1/2 cup olive oil
- 1/2 cup apple cider vinegar
- 1/2 cup freshly squeezed orange juice & zest of 1 orange
- Cook quinoa according to package directions. Then whisk all vinaigrette ingredients together and set aside.
- Mix everything together. *Option to add diced cooked chicken or cooked shrimp.
