Slow Cooker Italian Chicken and Vegetable Ragu (prep time 5 min, cook time 4-6 hours, makes 8 servings)

Ingredients:

  • 2 lbs. boneless, skinless chicken breasts
  • 4 carrots, diced
  • 4 zucchini, diced
  • 2 onions, diced
  • 30 oz. can chickpeas
  • 30 oz. can tomato sauce
  • 1 cup red wine (optional)
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 2 tsp salt
  • 2 tsp dried fennel
  • 1 tsp chili flakes (optional)

Preparations:

  1. Place all ingredients in a large slow cooker and cook on low for 6 hours or high for 4 hours.
  2. Serve over zoodles, brown rice or orzo.
