Slow Cooker Italian Chicken and Vegetable Ragu (prep time 5 min, cook time 4-6 hours, makes 8 servings)
- 2 lbs. boneless, skinless chicken breasts
- 4 carrots, diced
- 4 zucchini, diced
- 2 onions, diced
- 30 oz. can chickpeas
- 30 oz. can tomato sauce
- 1 cup red wine (optional)
- 2 tsp dried basil
- 2 tsp dried oregano
- 2 tsp salt
- 2 tsp dried fennel
- 1 tsp chili flakes (optional)
- Place all ingredients in a large slow cooker and cook on low for 6 hours or high for 4 hours.
- Serve over zoodles, brown rice or orzo.
