Slow Cooker Superfood Soup (prep time 10 min, cook time 6-8 hours, makes 8 servings)

Ingredients:

  • 2 cups sliced carrots
  • 2 large sweet potatoes, cut into cubes
  • 1 cup fresh or frozen green beans
  • 1/2 cup fresh cilantro, chopped
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 2 (15 oz.) cans of black beans, drained and rinsed
  • 1/2 tsp crushed red pepper flakes
  • 2 tsp black pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • salt to taste
  • 2 cups tomato sauce
  • 2 cups vegetable broth, low-sodium

Preparations:

  1. Combine all ingredients in the slow cooker, cover and cook on low 6-8 hours, or until veggies are tender.
  2. Option to add 2 cups coarsely chopped kale the last 5 minutes of cooking or until wilted.
