Smashed Chickpea Pita (makes 4 servings)
- 2 cans unsalted chickpeas, drained and rinsed
- 1/4 cup diced celery
- 1/4 cup Greek yogurt
- 4 tbsp diced red onion
- 1 1/2 tsp lemon juice
- salt and pepper to taste
- shredded carrots
- optional: sprouts or chopped lettuce/kale
- Smash the chickpeas but leave small chunks. Then add the rest of the ingredients except for carrots and sprouts/greens.
- Cut pita in half then open up pockets. Add 1/4 of chickpea mixture in pockets then top with sprouts or stuff lettuce/kale around the sides.
