Smashed Chickpea Pita (makes 4 servings)


  • 2 cans unsalted chickpeas, drained and rinsed
  • 1/4 cup diced celery
  • 1/4 cup Greek yogurt
  • 4 tbsp diced red onion
  • 1 1/2 tsp lemon juice
  • salt and pepper to taste
  • shredded carrots
  • optional: sprouts or chopped lettuce/kale


  1. Smash the chickpeas but leave small chunks. Then add the rest of the ingredients except for carrots and sprouts/greens.
  2. Cut pita in half then open up pockets. Add 1/4 of chickpea mixture in pockets then top with sprouts or stuff lettuce/kale around the sides.
