Summer Bruschetta (prep time 5 min, makes 4 servings)

Ingredients:

  • 2 tomatoes, chopped
  • 1 large cucumber, chopped
  • 3/4 cup fresh mozzarella, cubed
  • 1/4 cup red onion, finely diced
  • 1/4 cup olive oil and balsamic vinegar mix
  • whole grain baguette

Preparations:

  1. Slice baguette into 1/2″ thick pieces. 1 serving is about 4 slices. Mix all other ingredients and pile on top of slices.
