Summer Bruschetta (prep time 5 min, makes 4 servings)
- 2 tomatoes, chopped
- 1 large cucumber, chopped
- 3/4 cup fresh mozzarella, cubed
- 1/4 cup red onion, finely diced
- 1/4 cup olive oil and balsamic vinegar mix
- whole grain baguette
- Slice baguette into 1/2″ thick pieces. 1 serving is about 4 slices. Mix all other ingredients and pile on top of slices.
