Veggie, Fruit & Nut Everything Salad

Ingredients:

  • 2 cups of leftover basics (Ex. quinoa or barley (limit to 1/2 cup), beans, nuts, fruit, any vegetables)
  • Lemon juice
  • Black pepper
  • 1 tsp balsamic vinegar
  • 1 tsp olive oil

Preparations:

  1. Toss together or stack 2 cups leftover basics
  2. Squeeze fresh lemon juice and season with black pepper
  3. Drizzle 1 tsp each of balsamic vinegar and olive oil
